Gluten-free + Dairy-free Spiced Cake Donuts with Maple Glaze

Ingredients:

1 cup gluten-free flour (I use Bobs Red Mill 1-1 GF flour)

1/3 cup cane sugar

1 tsp baking powder

1 tsp cinnamon

1/2 tsp ground ginger

1/2 tsp ground cardamom

1/2 tsp sea salt

2 tbsp avocado oil

1 egg (sub 1 tbsp flax seeds + 3 tbsp water for vegan)

1/2 cup nut milk

1 tsp vanilla bean paste or vanilla extract

Glaze:

1 cup powdered sugar

1/4 cup maple syrup

3+ tbsp nut milk

Pinch of sea salt

Preheat the oven to 350°F. In a bowl, combine the dry ingredients and mix. Add in the wet ingredients and mix until everything is combined. Lightly oil a donut pan*. Put the batter into a plastic bag, cut off one corner then pipe into each donut spot on the pan. You should get 6 donuts. Bake for 9-10 minutes. *If you don’t have a donut pan, you can make these into muffins or “donut holes”.

While the donuts are baking make the maple glaze. Combine the powdered sugar, maple syrup and sea salt. Add in the nut milk into you reach the consistency you like.

When the donuts are done baking, immediately turn them out of the pan, cover in the maple glaze and enjoy!
