Autumn Spiced Granola

I woke up to the smell of fresh baked granola weekly as a child. My mom made the best homemade granola, full of whole food ingredients that are great for your body.

Store bought granola can be full of inflammatory oils, refined sugars, and oats sprayed with glyphosate. It’s so quick and easy to make at home and so much tastier. I love making different variations of granola based on the seasons or just what I have on hand.

Ingredients:

3 cups organic oats

1.5 cup organic puffed rice cereal

1/2 cup hemp seeds

1/2 cup ground flax seeds

1 cup pumpkin seeds

1 tbsp cinnamon

1 tsp nutmeg

1 tsp sea salt

1 tsp vanilla

1/2 cup coconut oil

1/2 cup maple syrup

1 cup dried cranberries

In a large bowl, mix the dry ingredients together. Add the oil and maple syrup. Mix until thoroughly combined.

Line a sheet pan with parchment paper or a silicone baking mat and spread the granola into an even layer. Bake at 350° for 25-35 minutes or until golden brown.

Sprinkle cranberries over the top, let cool completely then break into chunks.
