Chocolate Chip Banana Bread
I’ve been making this recipe for over five years and it never disappoints! I add a little bit of sourdough discard but you can totally omit it if you don’t have any. It doesn’t affect the flavor, just makes it a little extra moist.
Ingredients:
4 medium super ripe bananas, mashed
3/4 cup brown sugar
1 large egg
1/4 cup melted coconut oil
1/4 cup sourdough discard (optional)
1 tsp vanilla
1 1/2 cups all-purpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp sea salt
1 tsp ground cinnamon
1 cup chocolate chips, + more for the top
Directions:
Preheat the oven to 350°F.
In a large bowl, add the mashed bananas, brown sugar, egg, coconut oil, sourdough discard if using, and vanilla. Mix until combined.
Add the flour, baking powder, baking soda, salt, and cinnamon and mix until there are no clumps. Add the chocolate chips and mix until combined.
Line a loaf pan with parchment paper. Pour the batter in to the lined loaf pan and top with more chocolate chips.
Bake for an hour, or until a toothpick comes out clean when stuck into the bread.
Let cool for five to ten minutes in the pan then transfer to a cooling rack. Store in an airtight container for up to 5 days.
