Sourdough Discard Granola

3 cups organic oats (I love these ones)

1.5 cups crispy rice cereal or chopped nuts

1/4 cup coconut sugar (optional, add if you want your granola very sweet)

1/2 cup hemp seeds

1/2 cup ground flax seeds

1 cup shredded coconut

1 tsp salt

1 tsp cinnamon

1/2 cup coconut oil

1/2 cup raw honey

1/2 cup sourdough discard

1 cup dried fruit

Preheat the oven to 325°F. Line a baking sheet with parchment paper.

In a large bowl, combine all the dry ingredients except the dried fruit. Add the wet ingredients all at once then mix thoroughly, until everything is coated with the wet ingredients.

Spread the granola mixture onto the lined baking sheet. Bake for 30-45 minutes, until the edges and top of the granola look lightly golden brown. Let cool completely, add the dried fruit, then break into chunks. Store in an airtight container for up to two weeks.
