Lilikoi Butter

Lilikoi is the yellow Hawaiian passion fruit. It’s tangy, sweet, and so refreshing. Lilikoi butter is similar to lemon curd. It’s best drizzled on butter mochi, acai bowls, or just eaten by the spoonful :)

Ingredients:

3 large eggs

3/4 cup granulated sugar

Pinch of salt

1/2 cup fresh lilikoi juice

4 tbsp butter, diced

Place eggs, sugar, salt, and lilikoi juice in a medium saucepan. Do not put it over the heat yet. Whisk the ingredients together until smooth.

Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 10 minutes. Add the butter. Stir until smooth.

Remove from heat, strain, and pour into jars. Let cool and store in the refrigerator for up to a year.
