Homemade Sourdough Pop Tarts

Such a cute and delicious treat! Customize your pop tarts with whatever fillings you want, we love homemade strawberry jam and homemade Nutella :)

Depending on the size, you should be able to make at least 5 pop tarts. We were able to make 10 mini heart shaped pop tarts with this recipe.

Sourdough Pie Crust:

2 1/2 cups all-purpose flour

2 tbsp sugar

1/2 tsp sea salt

1 cup cold butter, diced

3/4 cup sourdough discard

4-7 tbsp ice water

Fillings such as homemade jam, homemade nutella, brown sugar and cinnamon.

Glaze:

1 1/2 cups powdered sugar

1 tsp vanilla extract

2-3 tbsp water or milk

In a bowl, combine the flour, sugar, and salt. Add in the cubed butter, mix it around so it’s covered in flour, and, using your fingers, smash each cube of butter until all the butter is in pea-sized chunks.

Add the sourdough discard and mix to combine. The dough should still be pretty shaggy at this point.

Add in 4 tbsp of ice water and mix. You want the dough to hold together when you press it together. If you feel the dough is still too dry and shaggy, add in more ice water a tablespoon at a time until the dough holds together. I ended up adding 6 tbsp of ice water.

Form the dough into a flat disc. Wrap the dough up in parchment paper or plastic wrap and refrigerate for at least an hour.

When ready to use, let it sit out at room temperature for a few minutes then roll out on a floured surface. Roll the dough until its about 1/4 -1/2 inch thick. At this point you can cut out shapes with a cookie cutter or cut the dough into rectangles for traditional pop tarts. Remember each pop tart needs to have a top and bottom.

Make an egg wash by whisking together two egg yolks with a teaspoon of water.

Place the dough on a baking sheet lined with parchment paper or a silicone mat. Add your fillings by placing about a tablespoon of filling in the center of one cut-out. Add some of the egg wash to the edges of the cut-out with filling in it and gently place the other cut-out on top. Use a fork to seal the two pieces together. Repeat until you have used up all the dough.

Preheat the oven to 350F. Place the pop-tarts in the refrigerator while the oven preheats.

Add the remaining egg wash to the tops of the pop tarts. Bake the pop tarts in the preheated oven for 20-30 minutes, depending on the size. You want them to be beginning to turn golden brown around the edges.

While the pop tarts bake, make the glaze. Combine 1 1/2 cups powdered sugar with 2-3 tbsp water or milk and 1 tsp vanilla. You want the glaze to be runny enough to drizzle but thick enough to settle nicely on the pop tarts. Drizzle the glaze on the hot pop tarts and add sprinkles or any other toppings and enjoy!
