Spiced Candied Pumpkin Seeds
Don’t throw away your pumpkin seeds after carving this year!
Pumpkin seeds are rich in antioxidants, iron, zinc, magnesium and many other nutrients. They have been show to reduce the risks of certain cancers, improve heart health and sleep, and lower blood sugar. They’re pretty powerful little seeds!
After rinsing and drying your pumpkin seeds, make these yummy candied pumpkin seeds. They’re so yummy on top of pancakes or waffles, yogurt, added to a salad, or just eaten plain.
Ingredients:
1 cup fresh pumpkin seeds
1/4 cup brown sugar or honey
1 tsp pumpkin spice
2 tbsp coconut oil
Pinch of sea salt
Preheat oven to 300°F. Line a baking sheet with parchment paper. In a medium mixing bowl, combine all the ingredients, making sure the pumpkin seeds are thoroughly coated. Spread evenly onto the lined baking sheet and bake for 40-45 minutes, until the seeds are toasted. Let cool completely then enjoy!
